The New Nordic Kitchen. The story on how our food culture grew out of nature and came back again.

Our Danish and Nordic kitchens have been through a long period of decay. Paradoxically, our food export grew in the same period as the quality of taste decreased.

When we met the genuine regional kitchens in Southern Europe during the 1960's we had a fresh start but still we had a long way to go before the New Nordic Kitchen evolved. Hear the story of how it happened.
